Winter Infused Gin
Method:
Start by soaking just the juniper berries in the vodka in a mason jar (with lid) over night.
After the juniper berries have soaked, add the rest of the botanicals. Screw the lid on tightly and give it a little shake.
Store your gin in a cool dark place for 36 hours.
Strain your infused gin into another clean jar or bottle, through a muslin cloth to catch all the bits. The gin may have a slight yellow tinge to it, but that's fine.
Enjoy with a classic tonic water or ginger ale.
Ingredients:
2 Tbsp juniper berries (fresh or dried)
75cl vodka
1 tsp coriander seeds
1 star anise
1 tsp dried orange peel
3 inch sprig of pine or 1/2 dried sprig
1 cinnamon stick
1 allspice berry
1 dried sage leaf
