Pineapple has to be one of our favourite flavours! it works so well with gin, especially in this Pineapple Collins recipe which has been invented by the Amázzoni Gin team, makers of our fabulous July 2020 Gin of the Month.
Their herbaceous gin is wonderful with the zingy pineapple fruit flavours and clean tones of the white vermouth. The mate tea syrup then adds a deliciously mellow and herbal touch. Delicious!

Pineapple Collins
Ingredients
40ml Amázzoni Gin
20ml white vermouth (Londinio Dry Vermouth is great in this cocktail!)
15ml lemon juice
10ml pineapple juice
100ml sparkling mate tea (available online)
Mint sprig and grapefruit wedge, to garnish
Method
Add your gin, vermouth, lemon juice and pineapple juice to a cocktail shaker with ice. Shake and strain into a wine glass. Top up with your sparkling mate, garnish and serve.
If you are unable to get your hands on sparkling mate tea then soda water will work in its place.
