Lemon Parfait

Ingredients (serves one)

40ml gin
25ml lemon juice
10ml Knickerbocker Glory Syrup
Spuma Polara, to top up 

Method

Fill a rocks glass with ice and add your gin, lemon juice and syrup. Give it a little stir, then top up with Spuma Polara. Garnish with a lemon wedge and serve. Delicious!
