Craft Gin Club's April 2024 Gin of the Month, this Japanese craft gin comes from the Wabi Sabi Gin company and is inspired by Japanese cherry blossom (known as sakura). It's made using Japanese cherry blossom and has a fabulously floral profile bolstered by herb tones from the likes of bay and thyme.
Those floral tones are a delicious match for the crisp, effervescent, white-wine profile of the prosecco, while the savoury herbaceousness of the gin contrasts yet elevates the sweet, fruitiness of the pineapple juice wonderfully.
The mouthwatering bitter-sweet orange flavours of the rich Cointreau then round out the whole experience with its citrusy aroma.
All combined in a champagne flute or saucer, this cocktail has a complex layering of tropical fruit, floral, herb and white wine flavours that are quite simply divine.

100ml pineapple juice
Prosecco, to top
Fresh pineapple, to garnish
