In keeping with the artistic theme of our May ‘19 Gin of the Month box, this clean, light rhubarb cocktail has been brought to us by the team behind May ‘19’s Gin of the Month, Romeo’s gin. The cocktail is inspired by the Farine Five Roses by artist Marc Gosselin, who also designed Edition no2 of the four limited-edition Craft Gin Club bottles that were made available exclusively in the UK for our members only!

15ml Spritz syrup
Soda, to top up
Dash rhubarb bitters
Slices of fresh rhubarb and pink peppercorns, to garnish
Fill a highball glass with ice. Add the gin, syrup, soda and bitters. Mix gently with a bar spoon. Garnish and serve.
