We're sad to bid farewell to our March Gin of the Month this week - but what a wonderfully delicious month Shortcross Wild Clover Gin has given us!

And what better way to bid farewell to this gorgeous Northern Irish gin that with a final delicious cocktail? This one was created specially for us by our Gin Joint of the Month, The Harbour Gin Bar in the Ramore Restaurants complex in Portrush. 

Named in homage to the Game of Thrones TV, which is filmed in the region, this creation from Harbour Gin Bar's Aaron Boreland is a delicious twist on the classic Ramos Gin Fizz. Cheers!

35ml Shortcross Wild Clover Gin

12.5ml Lime Juice

12.5ml Lemon Juice

30ml Sugar syrup

35ml Double Cream

20ml Egg white

2 dashes orange bitters

Method

Vigorously shake all the ingredients with ice for as long as you can  - at least a couple of ,minutes if you can manage it! Strain into a chilled glass and garnish with orange peel.
