Summer Pimm’s Punch
(Serves 4)
120ml gin
120ml Pimm’s or our Summer Garden Cup liqueur
90ml lime juice, freshly squeezed
15ml grenadine
10ml ginger syrup*
Soda, to top up
Fresh fruit and mint, to garnish
Start by filling the jug with ice, then add the gin, Pimm’s No. 1, lime juice, grenadine, and ginger syrup and top with soda water. Then get your garnish on after giving it a good stir. Finito!
*If you can't get your hands on ginger syrup, it's super easy to make…
All you need is:
100g fresh root ginger, 250ml water and 190g caster sugar.
Simply peel the ginger, slice it, whilst bringing your pan of water and sugar to the boil. Next, add your fresh ginger. Cook on very low heat until the texture turns syrupy, (this should take no more than 30 minutes). Strain into a jar and let cool. Et voila!
