3 of the best gin & elderflower cocktails

Elderflower Gin Fizz

35ml Gin
15ml Elderflower Syrup 
15ml Lemon Juice
75ml Sparkling Wine, to top
Lemon wheel and flowers, to garnish

Add the first three ingredients in a cocktail shaker with ice and shake well. Strain into a rocks glass over ice, then top up with sparkling wine and garnish.

Elderflower Gin Sour

60ml Gin
20ml Elderflower Syrup 
15ml Lemon Juice
1 Egg White
Orange peel and flowers, to garnish

Add all the ingredients in a shaker without ice and shake well, making sure the shaker is firmly held. Open the shaker and add ice and shake a second time. Strain into a coupette and garnish with an orange peel or edible flowers.

Summer Berry Highball

1 Strawberry
3 Raspberries
50ml Gin
15ml Elderflower Syrup
15ml Lime Juice
45ml Apple Juice
50ml Soda Water
Mint and raspberries, to garnish

Add the raspberries and strawberry to a shaker and gently muddle them.  Add the gin, elderflower syrup, lime juice, apple juice with ice and shake well. Strain into a Highball glass over ice and top with soda. Garnish with raspberries and mint.
