50ml Theodore Pictish Gin
25ml lemon juice
15ml fennel syrup*
Soda, to top up
Dill, to garnish
Add gin, lemon juice and fennel syrup to a cocktail shaker with ice. Shake and strain into a highball glass. Garnish and serve. Et voila!
*To make fennel syrup, combine one cup of caster sugar with one bulb of fennel, rinsed and chopped. Allow to sit in fridge overnight, so that the sugar can extract the juice. Strain the syrup and store in the fridge.
