Air Mail

Christmas is just the time for a special delivery - and you couldn’t ask for more than this classic rum & Champagne cocktail! Elegant, refreshing and utterly delicious.

Ingredients

  • 30ml rum
  • 15ml lime juice
  • 15ml honey
  • 45ml Brut Champagne
  • Mint sprig, to garnish

Method
Add the rum, lime juice and honey to a cocktail shaker, fill with ice and shake well. Double strain into a highball glass over ice and top with Champagne. Use a bar spoon to mix the drink together, then garnish and serve

Cranberry Christmas Cracker

Taking inspiration from classic mulled wine flavours, this fabulously fruity cocktail marries the spiced rum with warming ginger beer and tart, festive-feeling cranberry juice.

Ingredients

  • 50ml spiced rum
  • 75ml cranberry juice
  • 10ml lime juice
  • ginger beer, to top
  • fresh cranberries, orange slices and rosemary, to garnish

Method
Fill a glass with ice, add the rum, cranberry juice and lime juice and stir to combine. Top up with ginger beer, garnish, serve and enjoy.

Yule Log Flip

This rich, luxurious cocktail has all the mouth-watering flavours of a yule log. The creme de cacao, mascarpone and egg yolk combine to make this drink so velvety smooth – it’s almost as though you’re drinking a liquid dessert!

Ingredients

  • 45ml rum
  • 15ml creme de cacao
  • 10ml brown sugar syrup
  • 1 tbsp mascarpone
  • 1 egg yolk
  • Dark chocolate, to garnish

Method
Add all the ingredients to a cocktail shaker and shake well. Add ice and shake again. Strain into a goblet and garnish with broken-up pieces of dark chocolate.

Hot Buttered Rum

A “buttered” cocktail may seem strange - but trust us, it’s a luxurious, indulgent treat. Make the spiced butter in big batches and store it in an airtight container in the fridge for up to a month. It’s also delicious on toast!

Ingredients

For the spiced butter:

  • 125g unsalted butter
  • 125g soft light brown sugar
  • 1 tsp ground cinnamon
  • 1tsp mixed spice
  • 2tsp vanilla extract

For the cocktail:

  • 1 tbsp spiced butter
  • 125ml boiling water
  • 50ml rum
  • Cinnamon stick, to garnish

Method
Beat together all the spiced butter ingredients in a bowl until well combined. Put 1 tablespoon of the spiced butter in a mug and pour over the hot water. Add the rum and stir well, until the butter has melted and is well incorporated into the rum and hot water. Garnish with a cinnamon stick and serve.

Festive Rum Punch

If you’re entertaining a crowd this Christmas, there’s nothing better than a delicious rum punch to keep them happy. Plus batch-making your cocktails like this leaves you more time to enjoy the party!

Ingredients

  • Serves 10-12
  • 350ml fresh cranberry juice, chilled
  • 350ml fresh orange juice (or clementine, if you can get it), chilled
  • 175ml rum
  • 175ml ginger ale, chilled
  • 750ml (1 bottle) Prosecco or other sparkling wine, chilled
  • Fresh cranberries
  • 1 orange, sliced into thin rounds
    Plenty of ice

Method
In a chilled punch bowl, combine the cranberry juice, orange juice, spiced rum, ginger ale, and Prosecco. Stir the liquids very gently, using a wooden spoon. Garnish with fresh cranberries and sliced oranges. Just before serving, add plenty of ice to the bowl - or serve into individual glasses filled with ice.
