There's nothing like a classic gin cocktail - they're classics for a reason, after all! But when you switch up the gins you're using, you open yourself up to whole new experiences. This Batch take on the Clover Club, for example, is an absolute stunner!

Method:

1. Muddle raspberries and sugar syrup together, then combine with gin, lemon juice and egg white in a cocktail shaker.
2. Dry shake once to emulsify the egg, then pack the shaker with ice and shake again.
3. Strain into a cocktail coupe.
4. Garnish with fresh or frozen raspberries, as desired.

15ml lemon juice

3 or 4 fresh raspberries
