Create a buzz this gin O'clock! With a Lavender Bee's Knees!

The main botanicals in the April 2019 Gin of the Month - made exclusively for Craft Gin Club by Dodd's Gin - is honey, farmed from the beehives buzzing away above London. So what better way to enjoy this spirit, than in a classic Bee's Knees Gin Cocktail! We have added lavender to this one to add a level of floral perfume to the mix! Give it a go…you won’t BEE disappointed…

Lavender Bee’s Knees

50ml gin
25ml lavender and honey syrup
20ml fresh lemon juice
Ice
Lavender sprig to garnish

Combine 250ml of water and 250g sugar in a saucepan over medium heat, dropping in a few sprigs of fresh or dried lavender and a teaspoon of honey. Simmer until the consistency of a syrup, then strain. In a shaker packed with ice, combine all of your ingredients. Shake, strain into a cocktail coupe and enjoy!
