The Southwest Side - named in honour of The West Wind Gin's home in Margaret River at the southwestern tip of Australia - is a deliciously simple recipe that echoes the maritime spirit of The Sabre. 15ml lime juice
15ml sugar syrup
Pinch of salt
10 mint leaves - slapped!
