Cocktail: Tomatini

Looking for a lighter version of a red snapper cocktail? Then how about the Tomatini? You’ll get all of the savoury flavour, but with a deliciously refreshing, lighter martini-style texture.

Tomatini

1 large tomato
50ml gin
15ml white balsamic vinegar
15ml lemon juice
10ml simple syrup

Muddle the tomato in the bottom of a cocktail shaker, then add gin, vinegar, lemon juice and simple syrup. Add ice. Shake and strain into a chilled cocktail glass.
